Spontaneous fermentation golden sour ale aged in port wine barrel for 30 months. ABV 6.2%. Bottled: June 2022
Brewed on Dec 30, 2019, by performing a turbid mash on a grist of 44% raw wheat and 56% organic California grown pilsner malt from @admiralmaltings After 30 months of barrel aging, the barrels from this batch were blended back together and allowed another 6 months for carbonation/conditioning. No filtration besides gravity.
This beer is a beauty of wild beer and difficult to describe. A complex beer with light acidity, dry, bright and crisp mouthfeel. Notes of stone fruits, woods, vanilla, apple, hint of sweetness and funky flavor brought by the wild yeast
