Description
Outside Eliza has a long story of different barrels and lots of time. It started as a couple base beers fermented in oak wine barrels. One brewed with 100% barley back in 4/2016, fermented with a house mixed culture. The other was brewed in our first season of spontaneous fermentation back in 1/2017 using a recipe of 30% rye. In 6/2018 these two beers were re-fermented with almost 1000lbs of @olsonfamilyfarms1889 organic Princess Time yellow peaches and Snow Bright white peaches at a fruit ratio of about 50%.
In October 2018 the resulting peach beer was transferred into stout/bourbon barrels that were freshly emptied by another brewery. It was then left to rest for another year. In October 2019 the resulting beer removed from the barrels and further blended to taste with some low acid 9 month old spontaneous beer and some 42 month old dark beer. After packaging, it was aged another 4 months. The average age of this beer is now just over 40 months.
Filtered only by time, the final product is a refined dirty golden peach beer with a caramel malty sweetness, complimented with tiny fluffy bubbles of carbonation. The finish is dry with lingering peach flavors. Acidity is mild. Definitely drink this one just below room temps to get the full scope of flavor.
